2 Pieces Wild & Simple Skillet Redi™ Wild Alaska Pollock 14.4 oz Deep-Skinned, Boneless 424914
2 Large Red Onions (Thinly Sliced)
Lime Juice
1 Cup Mayonnaise
2-3 Each Jalapeno Peppers (Chopped)
1/4 Cup Cilantro, chopped
1 Quart Mole Sauce
12 Each Bolillo Rolls (split and toasted)
6 Cups Iceberg Lettuce (Shredded)
1 1/2 Cups Cotija Cheese (crumbled)
Combine onions and lime juice. Set aside 15 minutes or overnight.
Mix together mayonnaise, jalapeno and cilantro. Set aside.
Heat Skillet Redi Alaska Pollock with mole sauce.
Spread rolls with jalapeno mayo mixture, and top with lettuce, fish, pickled onions and cotija. Cover with the top roll.
